Description

Chablis Montmains is a Premier Cru, produced by Maison Chanson Pere & Fils. The history of this Maison has its roots in the distant 1700s, which is why it has had the opportunity to mature an experience that is almost unique in the world in the wine sector. The Chablis area, where the best Chardonnay grapes in the world grow, is a territory with a difficult climate; winters are harsh and characterized by frequent frosts. It is interesting to know the approach adopted by the local winemakers, who use special sirens, connected to sensors that detect temperatures below zero degrees and sound, so that the winemakers can use special stoves positioned in the vineyards (only in some areas, obviously ) or water sprayers which create a layer of protective ice around the grape, insulating it from the cold. The grapes subsequently ripen well thanks to the temperate and even hot summers. After the harvest and the vinification processes, the Chablis Montmains is left to refine for 9 months in oak barrels. The result is a fresh and mineral wine, it has a beautiful golden yellow color and shows a certain aromatic intensity. The nose is fresh, mineral, dominated by notes of dried fruit and citrus, complemented by a subtle hint of vanilla. In the mouth it is taut and structured with a nice gustatory precision, clear and elegant. Great wine.
