Description

Gavarini Chiniera Barolo DOCG , a great red wine produced by Elio Grasso , represents a noble expression of this precious denomination. The Nebbiolo grapes, an autochthonous variety that has become a symbol of the area, are grown with the Guyot method, on calcareous and sandy soils. Among the rows, the company's work is inspired by principles of environmental sustainability and culminates with the rigorously manual harvest in mid-October. Once in the cellar, the grapes are pressed and left to ferment in large steel tanks. The vinification continues with the malolactic fermentation, which is followed by the refinement which is divided into two phases. At first the wine rests in Slavonian oak barrels for two years. Following bottling, the wine evolves in glass for another 10 months before being put on the market. By virtue of its characteristics, Gavarini Chiniera Barolo DOCG can be enjoyed immediately, but also left to refine further for a maximum period of 10 years, giving its best.
