Passerina is a white grape variety native to central Italy. We find it above all between Marche and Abruzzo and its origin is disputed between the two regions. The curious name Passerina seems to come from sparrows, greedy birds for its small grapes. In recent years, passerina, often blended with pecorino (but also vinified alone) has enjoyed great success also thanks to the denominations of origin of Marche and Abruzzo which have included it in their specifications. Passerina has a straw yellow color with greenish hues and an olfactory range that ranges from tropical fruit to citrus fruits, with honeyed and sometimes herbaceous and spicy notes. The acidity is evident on the palate, but always balanced by a nice sapidity and a bitter finish. The high acidity makes passerina a good aging wine. As pairings, in the dry versions it is ideal for risottos and shellfish, fried food or fish soups, but it also goes well with typical local dishes.
