It is the perfect goblet for light and medium-structured white wines; these wines do not require prolonged contact with oxygen to best enhance their bouquet. Description

The white grape varieties traditionally grown in Chianti Classico (Trebbiano Toscano and Malvasia Lunga del Chianti) find their best enological expression in Vinsanto, but the highly calcareous soil and the altitude of the slopes of Ama offer greater possibilities for the production of a great white wine with Chardonnay grapes. And therefore, in 1984 Ama began the very careful and maniacal cultivation of the vine of French origin. The processing begins with the harvest, established after numerous organoleptically analyzed samples in the vineyard and in the laboratory. It takes place in a strictly manual way, in 10/12 kg boxes which are then passed on a sorting table for further selection. Vinification: after gently pressing the grapes, 60% of the must was refrigerated and fermented in steel tanks while the remainder was transferred to barriques. 25% of the grapes destined to ferment in wood was macerated on the skins for about 12 hours. The barriques (Allier, Troncais) were 50% new and 50% one year old. The part vinified in barriques underwent malolactic fermentation. The total permanence in wood "sur lies" lasted about 8 months by regularly practicing batonnage every 7 days. This wine was bottled in March, producing 22,200 Bordeaux bottles. Color: bright, clear gold. Bouquet: floral with hints of typically summer white flowers. Fruity that recalls summer fruit such as apricot, and a fairly important almond note. Taste: Decisive attack, with an excellent mineral and fresh opening. Excellent persistence and length. A real surprise.
