Augustale Castel del Monte Bombino Nero DOCG is a rosé wine made by Crifo , a cooperative winery that brings together over one hundred small producers in the Tavoliere delle Puglie area. The label is obtained from the exclusive vinification of grapes from the local Bombino Nero vine, grown on the calcareous hills of the Murgia. After the harvest which generally takes place around mid-October, the grapes are de-stemmed and pressed. They are therefore cold macerated for a maximum of six hours: this phase is crucial for extracting all the aromas from the skins. The alcoholic fermentation takes place at low temperatures, inside state-of-the-art steel tanks. The wine ages on its lees for two months and another two months in the bottle before being put on the market. Augustale Castel del Monte Bombino Nero DOCG is perfect to be enjoyed as soon as it is bottled, even if it can reserve pleasant surprises after 2-3 years of further rest.
