The Bellagriffi Moscatello Selvatico Puglia PGI is a wine produced in the Grifo di Ruvo di Puglia cellar. The company was founded in 1960 as a cooperative and currently represents one of the most expressive wineries in the South. The grapes come from 100% wild Moscatello vines, grown on soils rich in limestone and favored by the typical mild climate of Puglia. The training system is sapling. After the manual harvest which takes place at the beginning of September, the best grapes are taken to the cellar and subjected to crushing and destemming. Subsequently, maceration is carried out in the press for about 6 hours in order to extract the aroma from the skins. Fermentation takes place in steel containers and finally the refinement takes place for 40 days on the lees. Before being put on the market, the wine needs a further period of rest of 2 months in the bottle.
