The "Bidibi" is a dry white wine from the Maculan winery which is obtained from a blend made up of 60% Tai, a native Venetian vine, and 40% Sauvignon. The vineyard is located within the Breganze DOC and the land on which these grapes grow is volcanic and particularly rich in gravel: two aspects that the Maculan winery wants to enhance as much as possible and which are found at the moment of tasting . To do this, the care in the preparation guides the entire production process which begins after the harvest and which begins with a cold maceration phase which lasts approximately 2 days. This is followed by a very soft pressing which responds to the intention of not mistreating the grapes. The next step is for the wine to be aged for a period of 6 months in steel tanks, which further allow the organoleptic characteristics and typical aromas of the blend to be preserved intact. The result is a product with a pleasant and fresh drink: Maculan's "Bidibi" is therefore a perfect product to be enjoyed as an aperitif, which best describes its territory.
