Description
Bionzo Barbera d'Asti Superiore DOCG is a very structured red produced by the Piedmontese winery La Spinetta , which is obtained from the vinification of grapes of the local Barbera variety. Located in the locality of Bionzo in Costigliole d'Asti, the vineyards are home to almost centenary vines on marly and clayey soils and enjoy an excellent southern exposure. After a quick maceration, the grapes are left to ferment in steel tanks for two weeks with temperature monitoring. The subsequent malolactic fermentation takes place in French oak barriques, of which a percentage equal to 20% is for the first passage and the remaining part instead for the second passage. In the same barrels the wine ages for about a year. This process is completed thanks to a further refinement in glass for 6 months. Bionzo Barbera d'Asti Superiore DOCG can be appreciated already after bottling, as well as after a rest in the cellar for 5-6 years.
