Description
Cabochon Franciacorta Docg Brut Millesimato is produced by the Lombard winery Monte Rossa . It is the fruit of a blend that largely includes Chardonnay grapes, to which is added a percentage equal to 30% of Pinot Noir grapes. The company's vineyards are located on the morainic hills typical of the denomination. Thanks to the richness of the substrate and the particular microclimate, the vines produce grapes of remarkable elegance. When the grapes are fully ripe, the manual harvest takes place. Once in the cellar, the grapes are left to ferment in steel tanks. According to the provisions of the Classic Method, the aging on the lees takes place after the second fermentation in the bottle, and can last over 5 years. During disgorgement, the wine is topped up with a little liquer d'expédition. Cabochon Franciacorta Docg Brut Millesimato can be appreciated immediately, as well as after a careful rest of a few years.
