Description

Cavolo Amarone della Valpolicella DOCG is a wine that is produced at the Brigaldara winery in San Floriano. The company, founded in 1979, stands out for the excellence of the products due to the meticulous work in the vineyards and the artisan method. The grapes come from the Corvinone, Corvina and Rondinella vines, grown on lands located about 250 meters above sea level, mainly rich in limestone. After the manual harvest, the grapes are carefully selected and left to dry in boxes. After the drying period, the grapes are vinified in red by maceration on the skins. The fermentation process takes place in a natural way, limiting human interventions to a minimum. The wine ages for 24 months in barrique and for another 2 years in Slavonian oak barrels. Cavolo Amarone della Valpolicella DOCG is an intense and soft wine, which is well suited for immediate drinking, but can evolve in the cellar for over 7 years.
