The Cerasa Salento Rosato IGP is a wine that is born in the Calò Michele e Figli cellar. The company produces only quality bottles from native crops. The grapes come from the Negroamaro vines, grown on clayey and calcareous soils and favored by the typical mild climate of Puglia. After the manual harvest, which takes place in September, maceration is carried out for a maximum period of 18 hours, based on ripeness and colour. When the racking is carried out, only about 30% is destined for fermentation for about 10 days. Subsequently, it is aged for 6 months, 20% in small French oak barrels and the remainder in steel tanks. The final phase consists in the assembly and further rest in the bottle before being put on the market. Cerasa Salento Rosato PGI is an intense and persistent wine, which is well suited for ready to drink.
