Description

The Champagne Collection is one of the most prestigious labels by Pierre Gimonnet & Fils, produced in a very limited edition. Pierre Gimonnet & Fils' cellar is located in the heart of the Côte des Blancs, in France, where, in a few hectares of land, the company cultivates (still following traditional methods) highly prized vineyards, planted over 75 years ago. The Champagne Collection is 100% produced from the best chardonnay grapes and is a vintage, i.e. made with grapes from the same vintage, harvested exclusively by hand. Naturally following the Champenoise (or Classic) method, the wine in its most topical phase is left to refine for around 72 months on its lees. The result is an extraordinary, elegant sparkling wine with a very fine, yet structured and creamy perlage. Excellent gustatory intensity and final persistence, on the palate, in the mouth. This label is not produced every year, but only in the best years and only in magnum format (1.5 lt).
