The Fumin 'Esprit Follet' wine is born in the "La Crotta di Vegneron" cooperative cellar in the Aosta Valley; since 1980 the members have focused their attention mainly on the enhancement of native vines such as fumin, petit rouge, pinot gris and white muscat. All the vines are located between 500 and 850 meters above sea level, in a microclimate with little rainfall, but with a very pronounced temperature range between day and night, thus limiting the taking root of fungi and the presence of parasites. The 'Esprit Follet' wine is considered a single variety as it is produced exclusively from the 100% native Fumin vine and left to mature in wooden barrels of different sizes; the result is an elegant but at the same time complex wine, ideal to be savored at a dinner with friends. In order to enjoy all the characteristics deriving from the specific terroir, it is advisable to let the wine age in the cellar in its bottle for at least a couple of years; the optimal tasting is between 2 and 6 years from the harvest, after letting it oxygenate at least an hour before serving it (two if it is more than 4 years old) possibly in a decanter.
