Description

The Fourchaumes Chablis Chanson Pere & Fils is produced in the French region of Bourgogne-Yonne, precisely in the highly prized sub-area of Chablis. The Chardonnay used for its production here finds ideal conditions for development. Winters, however, are very harsh and spring is often slow in coming. A beginning of warmth begins to appear in May. The vineyards are managed with extreme care to protect the grapes from temperatures that sometimes drop below zero. With these premises, it can only be a full-bodied, robust and structured Chardonnay. The vinification of Fourchaumes Chablis begins with the manual harvesting of the grapes, followed by a soft pressing at a controlled temperature in order to protect the precious varietal scents. The aging is carried out in steel vats. Light gold color. Elegant, still very fresh, with hints of grapefruit on spicy oriental notes. The palate is dense, lively and well balanced. Very clean fruit. Well balanced acidity and good minerality. Long, persistent and generous finish. The wine can be drunk young or its consumption can be postponed for a few years. The result will be an evolution of taste and scents that will fascinate those who love chardonnay in all its facets.
