Description

Il Sogno Vino da Uve Stramature DOCG is a very particular wine that was born in the Travaglini cellar and takes this name from the fact that Giancarlo, throughout his life, always thought of one day producing a red wine made with overripe grapes. His thought was to create a wine with great structure and personality. The company is one of the most innovative realities in the Novarese area, by virtue of a skilful care of the territory in order to make the most of it. The grapes come from Nebbiolo vines located on soils of volcanic origin, rich in ferrous material and favored by the cool climate. Before the harvest, a meticulous selection takes place in the vineyard, choosing only the healthiest ones. The bunches are placed on racks and left to dry to obtain natural dehydration for a duration of 3 months. Then the fermentation takes place in stainless steel tanks, the refinement phase takes place in Slavonian oak barrels for about 40 months and for 8 months in smaller barrels. Finally, the bottling and marketing takes place. The Sogno Vino da Uve Stramature DOCG is a structured and intense wine and, due to its complexity, it is advisable to combine it with red meat dishes and aged cheeses, but it will also amaze you in combination with dark chocolate!
