Nus Malvoisie Cuvée Particulière is produced in the historic parcels of the Nus area, in sandy, loose soils located on gentle slopes. The grapes are harvested by hand in small crates then, in the shortest possible time, sent to processing. After a soft pressing, sheltered from the air, the crushed grapes are sent to the tanks where they remain in contact with the skins for 30 days, re-proposing the most traditional of winemaking systems, obviously supplemented by careful protection from oxidation and with of the temperature that never rises above 14° C. We thus obtain a wine rich in structure and complexity without losing minerality and pleasantness. At the end of the vinification process, the wine is introduced by gravity into wooden barrels, to face the twelve months of aging always on the lees.
