Description

The Champagne Special Club Chouilly Grand Cru is a Pierre Gimonnet & Fils label, a maison whose link with the production of high quality champagne dates back to the mid-eighteenth century. In this case, we are dealing with a fine vintage Blanc de Blancs champagne which is obtained from the vinification of only Chardonnay grapes from the same vintage. The fruits are harvested within a single parcel of vineyard (a real Cru) located in the Chouilly terroir, in the absolute best area for the production of Champagne grapes, i.e. the Gran Cru area. After a rigorous harvest, aimed at identifying only the best grapes, the vinification takes place in stainless steel tanks, which allow all the freshness of the varietal scents of this extraordinary vine to be preserved. The aging on the lees, a fundamental step of the Champenoise Method, is very long: over 60 months. The extra brut dosage (practically without sugar) allows you to make the most of the qualities of the base wine. The Champagne Special Club Chouilly Grand Cru represents the top of the Pierre Gimonnet & Fils production range and confirms it in the glass. Perfect for a formal appetizer, it is ideal to be enjoyed when young, just as it can evolve for three or four years in the cellar, to give ever more complex aromas. Very limited production of about 3000 bottles.
