Grillo "Sursur" is a white wine classified as Sicilia DOC Grillo. It is produced in the Contessa Entellina estate of the Donnafugata agricultural company, a company that has been able to make Sicilian wines famous all over the world. The estate is located in south-western Sicily, where the climatic conditions are ideal for obtaining healthy grapes characterized by strong aromas. "Sursur" is a clearly onomatopoeic word which means "cricket" in the classical Arabic language once also spoken in Sicily. Grillo is also the name of the vine from which this wine is produced. It is a native Sicilian variety resulting from the cross between Catarratto and Zibibbo, probably created in the second half of the 19th century by Baron Mendola. The Grillo "Sursur" is produced exclusively using grapes from this vine. The harvest takes place at the end of August/beginning of September, then the fermentation takes place in steel and then the refinement, first in the tank and then in the bottle. The result is a fresh and fruity wine with a young spirit.
