It is the perfect boblet for red wines with good structure and intensity; this type of wine certainly needs to "open" (that means to better develop its aromatic, intense and complex profile) and this is made possible by contact with oxygen (oxygenation) which, in fact, is facilitated by the generous dimensions of the chalice.

Description

The Toscana Rosso IGT Tassinaia is an important wine, its name means "place of stones", to indicate the stone used for the construction of the houses on the farm. This interesting label is offered by the Tuscan estate of Castellina Marittima Castello del Terriccio which, since the first post-war period, has been owned by the Serafini Ferri counts. The wine comes from a blend of Cabernet Sauvignon (50%) and Merlot 50%, fruit of vines grown 100 meters above sea level, which enjoy excellent exposure to the sun and the benevolent influence of the sea breeze. This is a particular choice, where 2 "international" vines are preferred instead of the traditional Tuscan Sangiovese; we can say that we are in the SuperTuscan category, i.e. red wines produced in Tuscany that do not respect, on purpose, the traditional rules of preparation of the region, but use other types of grapes and therefore cannot be classified as DOC or DOCG products. These wines are often aged in barriques. The Toscana Rosso IGT Tassinaia takes shape from a harvest performed in two different times, respectively of the two grapes. At the end of the harvest they are processed separately, first following a classic fermentation process, then a 14-month maturation process in small barrels, or barriques d'Allier. Subsequently, we proceed to assemble and bottle the product, which will still have to refine in glass for a year. Very important period to create the right balance. The final result is an aromatic red with a wide sip. A very pleasant, rounded label, with present but well-smooth tannins; an intense wine, which emerges for its long persistence, but which stands out for its balance.
