The Carso DOC "Terrano" of Castello di Rubbia comes from an almost extinct native vine and has its own austere appearance and vigorous body. Typical grapes of the Carso area, a plateau with limestone and red earth soil. The grapes are harvested by hand with manual selection at the end of September, destemmed, fermented in steel with indigenous yeasts, macerated for up to twenty days. At this point the wine ages for at least 12-18 months on the lees, undergoes malolactic fermentation and is bottled after 3 years, without being filtered. An intense, particular wine, sometimes rough, which fully expresses the typicality of the place where it is born. Really particular.
