'Testamatta' Rosso Toscana IGT Bibi Graetz 2021

Testamatta Rosso Toscana IGT is a fine red wine, produced by the Florentine winery Bibi Graetz . This label is obtained from the pure vinification of Sangiovese grapes, the most representative dark grape variety of the denomination. The eighty-year-old vines are cultivated with the Guyot and spurred cordon system to get the most out of the plots located north of Fiesole. Here the soils rich in clay and galestro allow the grapes to acquire a marked finesse. When the bunches are fully ripe, the best specimens are selected during the manual harvest. In the cellar the grapes are left to ferment with the use of indigenous yeasts in small oak barrels. The subsequent refinement lasts two years and takes place in French oak barriques, of which only a percentage equal to 10% is in the first passage. Testamatta Rosso Toscana IGT is a wine that boasts considerable potential for further evolution up to 7-8 years.
