Description
Alnus Etna Rosato DOC Bio is a wine produced by the Sicilian winery I Custodi delle Vigne dell'Etna . It is mainly obtained from the vinification of Nerello Mascalese grapes, to which is added a percentage equal to 20% of Nerello Cappuccio grapes. Both landraces give excellent results in the shadow of the majestic volcano. The vines grow on the northern slope of Etna and rest on a sandy substrate with a unique mineral composition. Once the ideal degree of ripeness has been reached, the bunches are harvested by hand. In the cellar, the vinification is inspired by traditional methods and involves the carrying out of the "pista e mutta", i.e. a pressing with immediate separation of the must from the skins. The alcoholic fermentation is followed by refinement which involves the use of cement tanks, where the wine remains for 5 months. Alnus Etna Rosato DOC Bio can be tasted immediately with satisfaction, just as it manages to evolve for another 2-3 years.
