Fattoria Zerbina's Albana Passito Arrocco is produced by exploiting the potential of noble rot or Botrytis Cinerea. Contrary to what one might think, the influence of mold in this case is able to give great potential to the sweet wine. The company takes care of the Albana di Romagna with almost maniacal passion, reserving the most suitable lands for its production. The protagonists are the rolling hills of the Tuscan-Emilian Apennines that surround the Marzeno Valley. At the basis of its production there is a strict selection of the grapes which in some years makes it possible to give up the release of the passito wine. In fact, the production of Albana Passito Arrocco is linked to the climatic trend and to the phenological development of the vine. Only under special conditions are the bunches harvested late and follow the process to obtain this raisin wine. All the care and hard work are rewarded by a product with unique organoleptic characteristics. Finesse and softness distinguish it in a taste-olfactory complexity that expresses character, structure and longevity, it is an excellent dessert wine, also suitable for combination with aged or blue cheeses or dry pastries.
