Description
Asili Barbaresco DOCG Bio is one of the labels of Ceretto , a company that has become synonymous with Piedmontese production of excellence. To obtain this red wine, the perfect expression of a suitable territory, the cellar prefers the plot that stands on top of the hill called Asili. The "cru", located at almost 300 meters above sea level, boasts a unique terrain, thanks to the presence of Sant'Agata marl, a mix of clay and limestone. Here the Nebbiolo grapes find an ideal environment to acquire intriguing scents and, when they reach maturity, they are selected by hand to be vinified alone. The maceration and fermentation, both carried out in steel, manage to keep the peculiarities of the vine intact, while the subsequent stages of aging in wooden barrels and in the bottle, lasting two years and six months respectively, seal the tertiary scents. Asili Barbaresco DOCG Bio is an excellent wine right from the start, but capable of finely aging for many years in the cellar.
