Description
Barbaresco DOCG Pajorè is an intense and structured red wine, produced by the Piedmontese winery Sottimano and obtained from the vinification of only Nebbiolo grapes. This autochthonous vine particularly representative of the denomination is grown on plots in the Neive area, in the province of Cuneo. The cru that gives the wine its name is among the finest, as it enjoys ideal conditions for the development of the vines, thanks to the microclimate and exposure. Once fully ripe, the bunches are carefully selected during the manual harvest. Upon arrival in the cellar, the grapes are destemmed and left to ferment spontaneously. This step involves the use of indigenous yeasts only and coincides with the maceration which lasts for about a month. It is aged for a year and a half, which takes place in French oak barriques. Perfect right from the start, Barbaresco DOCG Pajorè lends itself to giving pleasant surprises even after a further evolution of 4 or 5 years.
