Description
Barolo DOCG Cannubi is an important red wine, elegant and full-bodied, produced by Giacomo Brezza , a historic winery in the Langhe. The vineyards used to cultivate the Nebbiolo grapes, destined to be vinified alone, are located on the famous Cannubi cru. Here we find the ideal conditions for the cultivation of Nebbiolo: the soil substrate dating back to ten million years ago is made up of gray sandstones, which give the grapes minerality. After a careful manual harvest carried out in October, the bunches arrive in the cellar, where they are delicately pressed. The winemaking process begins with spontaneous fermentation on indigenous yeasts for about seven days. The subsequent maceration lasts for two weeks and does not include filtration or clarification. The wine is then aged for at least two years in Slavonian oak barrels and for another year in rigorously numbered bottles, to identify a limited production of excellence. By virtue of its complexity, its sumptuousness, its austere power, Barolo DOCG Cannubi can be enjoyed even after several years of rest in the cellar.
