It is the perfect boblet for red wines with good structure and intensity; this type of wine certainly needs to "open" (that means to better develop its aromatic, intense and complex profile) and this is made possible by contact with oxygen (oxygenation) which, in fact, is facilitated by the generous dimensions of the chalice.

This wine is ready to be tasted now, with great satisfaction; however, it has qualities that allow it to evolve and refine over time, if properly stored.

Description
The Barolo from the Lo Zoccolaio winery is the wine that best represents the style of quality and tradition of this winery and the territory it represents, the Langhe. Produced exclusively from the best Nebbiolo grapes, coming from the vineyards of the various parcels owned by the company located between the municipalities of Barolo, Monforte d'Alba and Verduno, at an altitude between 280 and 300 meters above sea level where the soil marly-calcareous is the ideal home for the roots of Nebbiolo. The grapes are harvested in October and immediately sent for destemming and soft pressing, followed by fermentation in steel tanks at a controlled temperature of 28°C. The must remains in contact with the skins for approximately two weeks, after which racking is carried out and the ideal and necessary conditions are created for the start of malolactic fermentation. At this point the wine is left to mature for 36 months in French oak barriques and then refined for a further 6 months in the bottle before being put on the market. The Barolo from the Lo Zoccolaio winery has an intense ruby red color with garnet reflections. On the nose it offers an intense and complex aromatic bouquet, with notes of ripe red fruit, spices, tobacco and leather. On the palate it is structured and powerful, with firm but soft tannins and good acidity that makes it fresh and lively, for a long and slightly savory finish. The wine is ideal to pair with meat dishes, such as braised meats, roasts and stews, but also with mature cheeses. We recommend serving it at a temperature of around 18°C and letting it breathe for a few minutes before tasting it, to allow its aromas to express themselves at their best.
