The Passito di Pantelleria Ben Ryé from the prestigious Sicilian winery Donnafugata is an excellent sweet wine, the result of a vinification of 100% Zibibbo grapes. The most famous Passito beyond the borders of the Bel Paese, bearer of a very significant name, Ben Ryé in Arabic means 'daughter of the wind', a name attributed to the island of Pantelleria, a magnificent land bathed by the Mediterranean and windswept. Ben Ryé is a truly special sweet wine, so much so that it has become the quintessential example of Passito di Pantelleria. The grapes that give life to this wine come from 11 districts of the island, each one is characterized by its particular microclimate, the same one that contributes to producing Zibibbo grapes with unique characteristics. To make the Passito di Pantelleria Ben Ryé, after the August harvest the grapes are left to dry naturally on racks, then in September, in the less precocious districts, the second harvest takes place. The dried grapes are immersed in the must obtained from the grapes of this last harvest, followed by the fermentation phase which lasts until November, after which the wine ages for 7 months in steel, after which it is bottled. However, before being marketed it still ages in the bottle for a year. The result is a Passito with great longevity, soft and enveloping, an aromatic sweet wine that has obtained several awards, including that of the AIS Vitae Guide.
