'Birbone' Toscana Rosso IGT Fattoria dei Barbi 2019

Birbone Toscano Rosso IGT is a wine produced by Fattoria dei Barbi , a historic winery that through its work wants to pay homage to the peculiarities of the territory. To achieve this label, the company mainly makes wine from Sangiovese grapes, to which it adds 10% of Merlot grapes. Both varieties are grown on the estate's vineyards, which enjoy favorable conditions to allow the bunches to reach full maturity. Once the accurate harvest phase has been completed, the grapes are de-stemmed, pressed and cooled. This last step is thought to make the process of extracting varietal notes from the skins more effective. Then follows the alcoholic fermentation at a controlled temperature, which lasts for two weeks, and a one-year rest in barriques and tonneaux, where the wine acquires its complex scents. Birbone Toscano Rosso IGT boasts enormous potential for refining, several years, if carefully stored in the cellar.
