Description

The Blanquette de Limoux AOC Cuvee Tradition is the sparkling wine from the Delmas winery based in Antugnac, France. In this area, the Mediterranean and Atlantic climates come together to create, together with the clayey-limestone soil, the ideal habitat for the cultivation of white grape varieties, especially Mauzac. The Blanquette de Limoux AOC Cuvee Tradition is a sparkling wine produced precisely with Mauzac, with the addition of a little Chenin Blanc. The harvest of these grapes is done exclusively by hand and, once transported to the cellar, they are placed in wooden crates. The vinification takes place according to the Classic method (or Champenoise): after the first phase of production, the base wine is bottled: here the second fermentation will take place with the consequent creation of the bubble (carbon dioxide); the precious aging on the lees will follow for about 18 months. The result is an excellent dry sparkling wine, with a nice vinosity, highlighted by the fragrant freshness. Well structured in the mouth, the finish is fine and elegant. To drink as an appetizer or to accompany a meal with grilled fish or white meat.
