Description

The Bollè Cuvèe Extra Dry is a sparkling wine from the Andreola house and is undoubtedly among the flagship products of the cellar. Harmonious and elegant, it lends itself to giving a clean and balanced sip, approaching both the simplest and most elaborate dishes. Bollè Cuvèe Extra Dry comes from vines located on the hills of a small village, Col San Martino, located near Valdobbiadene, in the Treviso area. The company has made the Glera grape the absolute protagonist of this sparkling wine, breeding it according to the modified cappuccina method. In the last ten days of September the harvest is carried out rigorously by hand. Subsequently we proceed with a soft pressing of the grapes and with the fermentation, carried out in stainless steel tanks. The sparkling process, on the other hand, takes place according to the Martinotti method and is followed by bottling. The marketing of the sparkling wine takes place only after about three months of aging in the bottle. The unmistakable quality of this product is to be associated with the excellent microclimate of the area and the clayey soils which allow the grapes to grow luxuriantly.
