Description
The Borrigiano Valdarno di Sopra DOC is a wine that originates from the Il Borro cellar in Loro Ciuffenna. It is a company very attentive to eco-sustainability, which combines local tradition with international style. The grapes come from the assembly of 40% Merlot, 35% Syrah and 25% Sangiovese vines. The plants are grown on soils rich in clay, sand and skeleton at about 500 meters above sea level and enjoy a breezy climate, ideal for optimal ripening. The training system adopted is spurred cordon. After the manual harvest, which takes place at different times for each variety, cold maceration takes place in oak vats, a procedure which allows the aromatic substances present to be preserved. Subsequently the fermentation takes place with maceration on the skins and finally the refinement takes place for 10 months in large wooden vats. Borrigiano Valdarno di Sopra DOC is a balanced and persistent wine perfect for immediate drinking, but it can rest in the cellar for about over 3 years.
