Bourgogne Pinot Noir AOC wine is produced in Burgundy near the village of Aloxe-Corton, in the Domaine Louis Latour cellar, one of the most renowned, important and historic in the entire region. The winery has over fifty hectares of vineyards that produce some of the best Grand Cru and Premier Cru in all of Burgundy; some particular vines that are grown in this cellar are the Chambertin and the Chevalier Montrachet. Bourgogne Pinot Noir AOC is vinified from rigorously hand-picked grapes coming exclusively from Pinot Noir vines which are over 25 years old and which are located on a clayey-limestone soil which makes the wine elegant, very fine and balanced. The fermentation takes place in open steel vats and the subsequent refinement in wooden barrels lasts for about 12 months at the end of which the Bourgogne Pinot Noir AOC wine can be safely opened; in order to better enjoy its characteristics, it is advisable to let it rest in the cellar for another 3-4 years.
