The Salento White Sparkling Briosè PGI from the Vecchia Torre cooperative winery is produced in the municipality of Leverano, in the province of Lecce, in Salento, in the southern part of Puglia. It is a wine made from three grape varieties: 60% Bombino, 20% Chardonnay and 20% Trebbiano. The soils in the area are of alluvial origin, sandy, clayey and gravelly. The climate of the area, characterized by hot summers, without too much temperature difference between day and night, and a good quantity of sea breeze give these grapes minerality and the right flavour.
