Verdicchio dei Castelli di Jesi Passito Brumato from the historic Marche winery Gioacchino Garofoli is a sweet wine with a great personality, one of those labels that, after the first sip, it is impossible to forget. Produced from the vinification of 100% Verdicchio grapes from vineyards cultivated in the hilly area of the municipalities of Serra de' Conti and Montecarotto, this passito is the result of a meticulous selection of the bunches which, harvested late, in addition to the characteristic overripeness, show traces of noble rot which give the wine the structure and aromatic complexity that distinguishes it. After a gradual harvest, the grapes are softly pressed, then a 40-day fermentation in wood is started, after which the Verdicchio dei Castelli di Jesi Passito Brumato follows a maturation ranging from 18 months to 24 months, after which is bottled. However, before being marketed it still ages in the bottle for another year. The result is a wine with great longevity, perfectly balanced and full-bodied. A soft, intense passito, but with a nice fresh vein.
