Description
The Cabernet Merlot Riserva Sanct Valentin Alto Adige DOC is a structured red wine from the San Michele Appiano winery. It is obtained from a blend that mainly contains two varieties, Cabernet Sauvignon (50%) and Merlot (40%), to which is added 10% of Cabernet Franc. The vineyards are carefully chosen from the plots owned by the company based on the terroir. The substrates boast a presence of gravel which favors drainage. The Merlot bunches are harvested towards the end of September, while for those of the two Cabernet varieties it is necessary to wait another two weeks. After the manual harvest of the grapes, the vinification begins with a maceration of about 20 days, during which the grapes ferment in contact with the skins. It is aged for one year in oak barriques and tonneaux before being blended during the bottling phase. The potential longevity of Cabernet Merlot Riserva Sanct Valentin Alto Adige DOC exceeds 10 years if carefully stored in the cellar.
