Description

The grapes destined for the production of Sodale, the estate's second wine, come from the Montiano vineyards themselves. The utmost attention during the harvesting phase and the subsequent selection of the grapes guarantee the best quality wine. The grapes are harvested by hand and taken to the cellar, where they are selected and fermented in stainless steel tanks. The management of the temperature and that of pumping over and delestage allow to obtain a balanced wine with very well expressed fruit and soft tannins. At the end of the fermentation, the wine is placed in barriques, where it undergoes malolactic fermentation and ages for 9 months. The color is intense red, with violet reflections; on the nose, notes of red fruit and sweet spices emerge which blend in a perfect balance with the vanilla notes of the wood. The taste is round, harmonious, pleasant with a finish of good persistence and sweet tannins.
