The Capoccia Maremma Toscana Ciliegiolo DOC wine is a terroir red produced by the Maremma wine cooperative Cantina Vignaioli del Morellino di Scansano, a production reality counted among the Tuscan excellences. This label takes shape from a blend made up of Ciliegiolo (85%) and Alicante (15%) grapes, the fruit of approximately 15-year-old vines, grown at a height of 300 meters above sea level, on soil rich in silt. The Capoccia Maremma Toscana Ciliegiolo DOC wine comes from a harvest carried out in mid-September, when the grapes have reached full maturity. After harvesting, the bunches are transferred to the cellar, where they first undergo a process of maceration and then fermentation. Subsequently, the wine ages in steel for 3 months, after which it is bottled. Before being placed on the market, it matures for another 3 months in a glass bottle. The final result is a dry red with a fruity sip. An elegant label, with excellent structure, for a well-balanced wine, which emerges for its long persistence.
