Description
Spumante Adami Cartizze Dry is an excellent prosecco produced at the Adami company, in Valdobbiadene, precisely in San Pietro di Barbozza. The company was born in 1920 from the commitment of Abele Adami and still today continues to produce excellent quality prosecco. The Spumante Adami Cartizze derives from the processing of Glera type vines, which grow on a basically rocky soil, but also composed of clay, sandstone and limestone, at an altitude of about 200-300 meters above sea level. The main characteristic of this sparkling wine is the sugar concentration of the grapes from which the wine comes and to keep this component high the harvest is postponed. The composition of the soil ensures that the plants do not yield much in terms of fruit quantity, but that their quality is excellent. The bunches are harvested by hand, left to rest in special boxes and then subjected to soft pressing in the cellar. Fermentation takes place at a controlled temperature, which allows the must to maintain all the aromas. The decantation is characterized by the addition of yeasts, then the wine is left to rest on the lees for a period of about three months. This is followed by the second fermentation, bottling and marketing.
