Description
Valpolicella Classico Superiore DOC Casalvegri , label of the historic Ca' La Bionda company, is a red wine that represents the excellence of the denomination. It is obtained from the blend of local vines Corvina (70%) and Corvinone (20%) while the remaining 10% is made up of Rondinella and Molinara, two ancient native varieties. The vines are grown in the classic area of Valpolicella, on a gentle hillside facing south-east, characterized by calcareous and clayey soils. Once the bunches have reached optimal ripeness, they are harvested manually with the utmost care. When the grapes arrive in the cellar, they are fermented spontaneously at a controlled temperature, thanks to the presence of indigenous yeasts. After a year and a half refinement in large barrels and a further rest in the bottle, Valpolicella Classico Superiore DOC Casalvegri is excellent to be enjoyed with rich dishes. Thanks to its important structure, it can evolve for years if carefully stored in the cellar.
