It is the perfect boblet for red wines with good structure and intensity; this type of wine certainly needs to "open" (that means to better develop its aromatic, intense and complex profile) and this is made possible by contact with oxygen (oxygenation) which, in fact, is facilitated by the generous dimensions of the chalice.

Description

Cascina Nuova Barolo DOCG is a great red wine signed by the Elvio Cogno winery, a winery of excellence active in the Langhe denomination. This full-bodied and fragrant red is obtained from the vinification of 100% Nebbiolo grapes, grown on the estate's vineyards at just under 400 meters above sea level. Here the vines meet particularly favorable conditions, such as the microclimate, the ventilation and the fertile soils. To preserve these characteristics, human intervention in the vineyard is limited to essential practices. The harvest takes place in October, when the grapes have reached the perfect degree of ripeness. In the cellar, they are placed in steel tanks, where they begin to ferment with temperature monitoring. The aging phase involves two steps: the first for 2 years in oak barrels and the second for 6 months in the bottle. Elegant, sumptuous wine, rightly tannic, with an excellent body, suitable for special occasions. By virtue of its peculiarities, Cascina Nuova Barolo DOCG can be opened even after 5/10 years of rest in the cellar.
