It is the perfect boblet for red wines with good structure and intensity; this type of wine certainly needs to "open" (that means to better develop its aromatic, intense and complex profile) and this is made possible by contact with oxygen (oxygenation) which, in fact, is facilitated by the generous dimensions of the chalice.

Description
Cassiano Dolomiti IGT is a red wine produced by the Manincor winery, a small South Tyrolean company dedicated to enhancing the local terroir. It is obtained from a blend that includes several international varieties: Merlot, Cabernet Franc, Cabernet Sauvignon, Syrah, Petit Verdot and Tempranillo. The plots are located in three different areas, which share suitable soils rich in sand and clay. The manual harvest involves a stepwise process, to ensure that the bunches of each grape variety have reached maturity. Vinification involves separate processing for each variety. Spontaneous fermentation with indigenous yeasts and maceration on the skins takes place in wooden vats for a period of between 10 and 20 days. Once the assembly is complete, the refinement phase lasts a year and 4 months and takes place in French oak barriques. Excellent immediately, Cassiano Dolomiti IGT is a red that boasts good potential for evolution up to 4/5 years.
