Cerretalto Brunello di Montalcino DOCG is a prestigious label signed by the Casanova di Neri winery, an excellent production company that has been operating in the Montalcino area for decades. Obtained from the single-variety vinification of Sangiovese grapes, which benefit from a favorable concentration of minerals in the soil of the owned vineyards, this structured and complex red wine is the result of skilful work, from harvesting to bottling. It all begins with the harvest of the Sangiovese grapes, which generally takes place in the first two weeks of October, and involves careful manual selection of the grapes, both before and after destemming. Fermentation, completely spontaneous on indigenous yeasts, is followed by maceration, supported by a gravity system in special cone-shaped vats. The refinement consists of two fundamental steps: the first in oak barrels for 3 years and the second in the bottle for at least 2 years. Cerretalto Brunello di Montalcino DOCG can evolve further if properly stored, enhancing important dishes and elegant dinners.
