Cervaro della Sala is a white wine classified as Umbria IGT. It was born on the Castello della Sala estate of the Antinori family, which boasts a centuries-old tradition in the wine-growing field. The vineyards are located in Umbria, near the border of Tuscany, not far from Orvieto. The Cervaro della Sala wine derives its name from the ancient owners of the castle, seat of the estate: the Monaldeschi della Cervara. The vines used for the production of this wine are Chardonnay and Grechetto. While the former is a French vine widely spread throughout Italy, the latter is probably a vine of Greek origin imported into Italy in ancient times, which found in Umbria the ideal conditions to express itself at its best. The Chardonnay harvest takes place in the second half of August, followed by that of the Grechetto in early September. The two types of grapes are vinified separately at the beginning and assembled at a later time. The result is a wine characterized by marked freshness and sapidity.
