Chablis Selection Massale Vieilles Vignes is a refined white wine, signed by Domaine Servin , a winery that fully values the characteristics of Burgundy. It is obtained from the exclusive vinification of Chardonnay grapes, grown on forty-year-old vineyards. The micro-territory called Pargues, on which the production is concentrated, boasts a unique substrate with high percentages of minerals. This gives the berries elegant and unmistakable characteristics. Through the manual harvest, the staff checks the degree of ripeness of the bunches, selecting only the best. In the cellar the winemaking process begins with the alcoholic fermentation in steel tanks. To obtain an extraordinary result, the refinement phase involves the use of both steel and oak barrels. Thanks to this choice, Chablis Selection Massale Vieilles Vignes maintains a pleasant freshness, but at the same time acquires rounder flavors and more multifaceted scents. This label is ready to drink, even if it can also rest for 3 or 4 years in the cellar.
