Description
Champagne Brut Blanc de Blancs , produced by the historic French maison Delamotte , enhances the characteristics of a very suitable territory. It is obtained from the vinification and sparkling process of only Chardonnay grapes, in line with the Blanc de Blancs style. The grapes come only from vineyards classified as Grand Cru, which include the plots of Mesnil-sur-Oger and Avize. Among the rows, the careful work carried out by the company allows the ecosystem to be kept in perfect balance until the harvest with manual selection of the bunches. In the cellar the alcoholic fermentation takes place exclusively in steel tanks which preserve the varietal notes. As required by the Champenoise Method, the wine undergoes a second fermentation in the bottle, which involves aging on the lees for at least 3 years. A minimal dose of liquer d'expedition is added to the disgorgement. Champagne Brut Blanc de Blancs can be appreciated immediately, but can also be left to evolve for another 3-4 years in the cellar.
