Chardonnay 'Classic' Simcic Marjan 2021

The Chardonnay Classic is a mineral and fragrant white wine, made by the Slovenian winery Simcic Marjan . It is obtained from the vinification of only Chardonnay grapes, an internationally widespread variety that has found a very favorable environment for its development on the lands of the appellation. The plots are located about 200 meters above sea level and enjoy an east-west sun exposure. On the marly and calcareous substrates, the thirty-year-old vines find the necessary nourishment until the manual harvest, which takes place in mid-September. Upon arrival in the cellar, the grapes are left to macerate for 24 hours and then placed to ferment in stainless steel tanks. The refinement involves an initial passage of six months in steel and in contact with the fine lees and a further rest of at least one month in the bottle. Chardonnay Classic can be appreciated with pleasure immediately, as well as after a couple of years of evolution.
