Description

The Chianti Classico DOCG from the Canonica a Cerreto winery is produced in Castelnuovo Berardenga in the heart of Tuscany, where the company is a splendid example of biodiversity. The grapes come from 85% Sangiovese, 10% Cabernet and 5% Merlot. The vines are grown on soils rich in clay, limestone and schist at 350 meters above sea level with southern exposure. The mild, sunny climate with considerable temperature ranges gives the grapes the right ripening. After the manual harvest, the best bunches are selected and subjected to fermentation in steel tanks with maceration on the skins. The refinement takes place in French oak barriques for 18 months followed by a further 6 months in the bottle. Chianti Classico DOCG is an intense and soft wine, ideal to be tasted immediately, but it can evolve in the cellar for a further three years, if correctly stored.
