Description

The Etna DOC Cottanera Classic Method sparkling wine is one of the most renowned products of the Cottanera winery of the same name. The particularity of the Sicilian maison lies in the privileged position of its vineyards, located at the foot of Etna. The soils on which the vines grow are rich in lava material, ensuring optimal development of the plants. The main vineyards for the production of sparkling wine are located in Castiglione di Sicilia, a municipality located in the province of Catania. The first phase of wine production starts with the September harvest, which involves the manual selection of the best bunches of Nerello Mascalese, used in 100% purity. The vinification begins with the destemming and pressing of the grapes, followed by a double fermentation, for 8 months in oak barrels and for the remaining eight in steel tanks. The wine is left to age for 40 months on the lees before being bottled and left to rest for a further year. Etna DOC Cottanera Classic Method lends itself to immediate consumption, but can easily age for another 12 months in the cellar.
