Castel del Monte DOC Colle dei Grillai is a terroir wine proposed by the prestigious Corato Cantine Carpentiere winery, an important Apulian production reality that produces labels of character and depth. This red takes shape from a skilful blend of Nero di Troia grapes (70%) and Merlot 30%, the fruit of vineyards grown on the karst-hilly soils of Castel del Monte, where Frederick II of Swabia, nephew of Frederick Barbarossa, hunted with his hawks. The Castel del Monte DOC Colle dei Grillai takes shape from a manual harvest, in boxes. After harvesting, the bunches are immediately taken to the cellar, then, waiting to be pressed, they are placed in cold rooms. A traditional red winemaking process follows, with fermentation in steel on native yeasts. Subsequently, the wine is aged in steel, after which it is bottled. The finished product is an elegant red, with a pleasant sip. A balanced label, which emerges for its good structure and excellent persistence.
